Enjoy your dinner with this tasty chutney made using tomatoes – a perfect Indian condiment.

Ingredients

lb tomatoes, coarsely chopped

jalapeño chiles, seeded, finely chopped

large onion, coarsely chopped

cup red wine vinegar

cup sugar

tablespoon grated gingerroot

teaspoons cumin seed

teaspoons curry powder

teaspoon salt

cloves garlic, finely chopped

Directions

  • 1 In 4-quart nonaluminum Dutch oven, mix all ingredients. Heat to boiling; reduce heat. Simmer uncovered 1 hour 45 minutes, stirring occasionally, until thickened. Cool 2 hours. Store tightly covered in refrigerator up to 2 weeks.

This chutney can be served as an appetizer spooned over goat cheese or cream cheese, and it also tastes great as a topping for grilled fish or chicken.
