Tomato, Beef and Barley Soup

Ingredients

lb lean (at least 80%) ground beef

cans (19 oz each) Progresso® Vegetable Classics hearty tomato soup

cups water
1/2
cup uncooked quick-cooking barley
1
cup sliced celery
1
cup Green Giant® frozen mixed vegetables (from 1-lb bag)
6
tablespoons shredded fresh Parmesan cheese

  • 1 In 4-quart saucepan or Dutch oven, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
  • 2 Stir in soup, water, barley and celery. Heat to boiling, stirring occasionally. Reduce heat to low; simmer uncovered about 15 minutes, stirring occasionally, until barley is tender.
  • 3 Stir in frozen mixed vegetables. Cook 6 to 7 minutes, stirring occasionally, until mixture is hot. Sprinkle each serving with 1 tablespoon cheese.

I used the expert tip about the tomato basil soup. It was much tastier than the plain tomato soup. I also used whatever frozen solo veggie I have in the freezer and so far we prefer sliced carrots, or green beans, or peas, or corn. Good, hearty and simple!

Being Summer in New Zealand, there are so many things to harvest in our garden. Being new at this, I have been into doing alot of reading on herbs, veggies, etc. During this time, I read how important Barley is to the diet. So, when I seen this recipe I thought I would "give it a go", using not only all the abundance of tomatoes we have but using the ol Barley as well! I can say, its a very very delicious meal. Really enjoyed it, right to the last drop!
