This should NOT be listed as vegetarian. Chicken is meat too. Vegetarian means NO meat. No chicken, no fish.

This recipe is always a hit. I've added chicken or sausage to it and turned it into a main dish. Very easy and makes for great leftovers.

My family really enjoyed this dish. The flavor was great and it was so easy! We didn't have all the right vegetables in the house so I substituted some frozen stir fry type veggies and it worked well. Very low in calories also!
