Three ingredient appetizer! These cute kabobs are loaded with big flavor thanks to Giardiniera, salami and Swiss cheese.
cup Giardiniera vegetable mix (from 16-ounce jar), drained
cubes (1/2 inch) hard salami (about 1/2 pound)
cubes (1/2 inch) Swiss cheese (about 1/4 pound)
Cut larger pieces of vegetable mix into 1/2-inch pieces.
Alternate pieces of salami, vegetables and cheese on toothpicks.
Cubes of cooked ham would also be tasty with the Swiss cheese and pickled vegetables.
These quick-to-fix appetizers can be made 4 to 5 hours ahead, then covered and refrigerated until it's time to serve them.
Giardiniera is a mixture of pickled vegetables, such as carrots, cauliflower, red pepper and celery. You can usually find it in the supermarket with the pickles and olives.
