Three-Cheese Pasta with Roasted Vegetables

Ingredients

cups uncooked penne pasta (8 oz)
1/2
large red bell pepper, cut into 1-inch pieces
1
small zucchini, quartered lengthwise, cut into 1-inch pieces
1
small yellow summer squash, quartered lengthwise, cut into 1-inch pieces
1
cup sliced fresh mushrooms (3 oz)
1
yellow onion, cut into 1-inch pieces
2
cloves garlic, cut in half
2
tablespoons olive oil
3/4
teaspoon Italian seasoning
1
pouch (9 oz) Progresso™ Recipe Starters™ creamy three cheese cooking sauce
1/2
cup half-and-half
1/2
cup shredded Italian cheese blend (2 oz)
Shredded Parmesan cheese, if desired

Directions

  • 1 Heat oven to 450°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package, using minimum cook time.
  • 2 Meanwhile, in 15x10-inch pan, toss bell pepper, zucchini, yellow squash, mushrooms, onion and garlic with oil and Italian seasoning. Roast uncovered 8 to 10 minutes, stirring once, until vegetables are tender. Remove garlic from pan; smash with back of fork or finely chop with knife.
  • 3 In large bowl, gently stir together cooked pasta, roasted vegetables, garlic, cooking sauce, half-and-half and Italian cheese blend. Pour into baking dish.
  • 4 Bake uncovered 12 to 17 minutes or until bubbly and top is light golden brown. Serve with Parmesan cheese. If desired, season to taste with salt and pepper.
