I have made this chili several times! We always double the recipe and freeze some for another quick dinner. Great with cornbread! Yum.

I doubled this recipe and added about 1 lb of ground beef. I also used 1 each of orange, yellow and green bell pepper. I didn''t use the sour cream topping, but I''m sure it would be great. My family LOVED it! I usually have NO leftovers for the next day, but because I doubled the ingredients, I had plenty to freeze! I also have a 2 year old who only eats things like fruit and hot dogs, and when I put about a cup in the blender and warmed it up with lots of cheese and crackers, she ate the whole thing, which is amazing! The thing about this chili, it is lighter than most chili that I have tried. I really liked it. Thanks!

My husband chose to make this recipe one last week. I was a bit skeptical at first, but it was delicious! He did add a pound of ground sirloin to the chili and I think that made it not too spicy for our boys (3years old). It may be a bit spicy for younger kids with amount of chili pepper in the recipe, if you don''t have the meat. Also, after preparation, I used a chopper to finely chop all the veggies, except for the beans to feed to the boys. When I mixed the chopped veggies, back into their bowls, it lloked like regular chili, so you probably could do this to begin with. They LOVED it (and they are PICKY eaters). My husband and I loved the chunks of beans, peppers and tomatoes. (and I had never tried chili with sour cream - yum! - boys only had cheese ontheirs)It''s going to be a staple around here, I''m sure for a long time.

This is the best chili that I have ever tasted. I have a family of six, and they all just raved over this meal.
