Three-Bean Christmas Chili

Ingredients

can (28 oz) whole tomatoes, undrained
1
can (15 oz) Progresso® dark red kidney beans, drained
1
can (15 oz) Green Giant® garbanzo beans, drained
1
can (15.5 oz) Green Giant® butter beans, drained
1
can (15 oz) tomato sauce
3
small red, orange or yellow bell peppers, cut into 1-inch pieces
1
Anaheim or jalapeño chile, seeded, chopped
1
to 2 tablespoons chili powder
2
teaspoons ground cumin
1/4
teaspoon pepper
1/2
cup sour cream
3
tablespoons Old El Paso® Thick 'n Chunky salsa
Chopped fresh cilantro, if desired

  • 1 Into 4-quart Dutch oven, pour can of tomatoes; break up tomatoes with spoon. Stir in remaining ingredients except sour cream, salsa and cilantro. Heat to boiling; reduce heat. Cover and simmer 30 to 35 minutes or until bell peppers are tender.
  • 2 In small bowl, mix sour cream and salsa. Serve chili with sour cream mixture. Sprinkle with cilantro.

This chili had good taste and I enjoyed the peppers and different beans in it. I added ground beef mainly because I could see my husband turning his nose up at a chili without beef or chicken. I added an extra can of tomato paste since the chili seemed a little too thick with adding the beef. I also added chopped onions but only because I had some to use up. I do enjoy a little spicier chili but this was at a perfect spice level for the kids and my 5 year old especially enjoyed this chili. My husband wasn't crazy about the large pieces of tomatoes so maybe I will leave it out next time and used diced tomatoes or tomato sauce in it's place.

I have made this chili many times & myself and friends love it. It is easy to freeze for future meals which is great for me as I live alone.
