tablespoons sugar

teaspoons baking powder

cup milk

tablespoons vegetable oil

teaspoon vanilla, if desired

Directions

  • 1 Brush griddle or skillet with vegetable oil, or spray with cooking spray. Heat griddle to 350°F, or heat skillet over medium-low heat.
  • 2 In medium bowl, stir all ingredients with whisk or fork until blended.
  • 3 For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook about 30 seconds or until edges are dry. Turn; cook other side until golden brown.

These are the best pancakes! The baking powder make it rise real fluffily, and the vanilla brings out more of the flavor. I use less sugar, but adding a little does help.

more of a question... the nutritional data says 1 serving = 3 pancakes, the recipe states it makes 7 servings, and the directions day to use 1/4 cup batter for each pancake. By my math, then it should make 21 pancakes (7 x 3) so needs 5+ cups of batter (21 x 1/4 cup). which makes the quantities in the recipe suspect....so which of these is correct?
