Thai-Style Chicken Curry Soup

Ingredients

carton (32 oz) Progresso® chicken broth (4 cups)
3
tablespoons packed brown sugar
2
tablespoons soy sauce
2
tablespoons rice vinegar
2
teaspoons curry powder
1
small red bell pepper, coarsely chopped (1/2 cup)
1
small jalapeño chile, seeded, finely chopped (1 tablespoon)
2
cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
2
tablespoon chopped fresh cilantro, if desired

  • 1 In 3-quart saucepan, mix all ingredients except chicken and cilantro. Heat to boiling over medium-high heat. Reduce heat to medium. Simmer uncovered 3 to 5 minutes or until bell pepper is crisp-tender.
  • 2 Stir in chicken. Cook 1 to 2 minutes or until chicken is hot. Just before serving, add cilantro.

Fantastic soup! I am a huge Thai fan, and this is a winner. I added onion, shrimp, and fresh tomato to the soup. Carrots would be a great addition too.

This soup has wonderful flavor! I used trio (a blend of red and green peppers and onion)and added additional vinegar for personal preference. I also added mushrooms and shrimp and black pepper. Other additions could include carrots and baby corn. I served jalapenos on the side for those who can't handle the heat. This recipe is definitely a keeper!

My boyfriend said to give this 5 spoons. He's eating it right now and LOVES it. My mom is Thai, dad is American so I grew up eating Thai food but can't really cook it myself. This was very easy (except that I didn't know how to de-seed jalapenos so it took me a while) and tastes great. Spicy and sweet. Kind of tastes like hot & sour Thai soup. Instead of the deli chicken I cooked & cubed a large chicken breast. I also used 2 jalapenos and it's still not too spicy. Tastes great with lots of the cilantro. Will make again.
