Thai Peanut Chicken

Tender chicken thighs are coated with a savory sauce. For a little crunch, top with chopped cocktail peanuts.

boneless skinless chicken thighs (2 lb)

bottle (13.5 oz) Thai peanut sauce

medium carrots, sliced (3/4 cup)

medium green onions, sliced (1/2 cup)

cup uncooked converted white rice

cups water
1/4
cup chopped cocktail peanuts

tablespoons chopped fresh cilantro
1/2
cup chopped red bell pepper, if desired
  • 1 Spray 3- to 4-quart slow cooker with cooking spray. Place chicken in cooker. In medium bowl, mix peanut sauce, carrots and onions; pour over chicken.
  • 2 Cover; cook on Low heat setting 5 to 6 hours.
  • 3 Cook rice in water as directed on package; spoon onto serving platter. With slotted spoon, remove chicken from cooker; place over rice. Pour sauce from cooker over chicken. Sprinkle with peanuts, cilantro and red bell pepper.

I've now made this twice, each time with different peanut sauces. And I'm of the "it's just ok" camp on this recipe. I don't know if it's the sauce, or just missing some spices. I did have to add some salt because without that it was completely tasteless. It's an easy recipe to make, but it's just ok (I'd give it 2 1/2 if I could). I'm sure there's better Thai Peanut Chicken recipes out there which I'll be looking for.

This was good! I used one small onion instead of the green onions, and garnished with cashews instead of peanuts because that was what we had.
