I tried this and must have done something wrong (although I followed the recipe - just replaced the chicken with chicken breasts)....the peanut butter burned and didn't look anything like the pictures! I scraped off the peanut butter mixture and ate the chicken though....not too bad. Not something that I want to try again though.

Very tasty! The sauce was a little too thick for my liking and I thinned it out the next day for the leftovers. But the chicken came out very moist and delicious. I will definitely make this again.

This recipe is fantastic! When I saw salsa and peanut butter together I was a bit nervous, but once I tasted it, I though it was great. Next time I''ll add a bit more peanut butter beacuse that''s my favorite part. Make extra sauce because it goes great with rice. I made basmati rice on the side and it was fantastic with the chicken!

So glad to find this recipe! Have been making the crockpot version a few years and it never occurred to me to convert it to a regular method recipe. This version works better for my current lifestyle. I always added a few good shots of hot sauce to spice it up enough for my hubby and me. We served it over rice or sometimes over fettucini, not having access to Thai noodles. Delicious!

I made this with skinless boneless chicken breast. It was the best baked chicken that I have ever made. This is a must try recipe.

This was pretty good! I used medium salsa, because I''m never sure how spicy something will turn out. The only thing "funny" about it was that the tomatoes in the salsa gave it a tangy taste. It wasn''t a bad taste at all, just a taste that I might prefer toned down a bit. I served it with flat, phad thai style noodles that I stirred into the sauce after removing the chicken. Very yummy!
