Ingredients

3: cups chopped cooked chicken

1/2: cup chopped green onions

1: cup shredded carrot

1: cup pea pods, cut diagonally

1: cup julienne red or yellow bell pepper

2: cups shredded romaine lettuce

1/2: cup Peanut Dressing (below)

1/4: cup dry-roasted peanuts

Directions

1 In large bowl, toss chicken, onions, carrot, pea pods, bell pepper and lettuce.
2 Add Peanut Dressing; sprinkle with peanuts.
3 For Thai Sauce, mix 1/4 cup sugar, 1 teaspoon sesame seed, 1/2 cup soy sauce, 1 teaspoon sesame oil, 1 tablespoon chopped garlic, 1 tablespoon chili paste, 1 tablespoon tamarind paste in saucepan. Bring to a boil. Remove from heat. Cool.
4 Peanut Dressing Mix 1/3 cup Thai Sauce (recipe above), 1/4 cup peanut butter, 1 tablespoon rice vinegar, 6 tablespoons olive oil and 1 tablespoon chopped cilantro with whisk until blended.

Expert Tips

Both the Thai Sauce and Peanut Dressing can be made ahead of time. Look for the tamarind paste in Indian or Asian markets. It adds lots of flavor but the sauce is good without it too.
