Tequila-Lime Chicken with Honey Drizzle

Ingredients

Chicken

tablespoons chopped fresh cilantro

green onion, chopped (1 tablespoon)

cloves garlic, chopped

tablespoon sugar
1/4
teaspoon onion powder
1/2
teaspoons ground cumin
1/4
teaspoon crushed red pepper flakes
1/4
teaspoon ground red pepper (cayenne)
Salt to taste
1/4
cup tequila
3
tablespoons olive oil
1
to 2 tablespoons fresh lime juice (1 medium)
1
teaspoon soy sauce
1
lb uncooked chicken breast tenders (not breaded; about 8 tenders)

Drizzle and Garnish

tablespoons honey
1
tablespoon olive oil
Salt and freshly ground black pepper to taste
Additional chopped fresh cilantro

  • 1 In large bowl, mix all chicken ingredients except chicken tenders. Add chicken; toss gently to mix. Cover with plastic wrap; refrigerate 1 to 2 hours to marinate.
  • 2 Heat gas or charcoal grill.
  • 3 When grill is heated, remove chicken from marinade; discard marinade. Place chicken on grill over medium-high heat. Cover grill; cook about 3 minutes on each side or until browned and no longer pink in center.
  • 4 Before serving, drizzle chicken with 2 tablespoons honey and 1 tablespoon olive oil. Sprinkle with salt, pepper and additional chopped cilantro.

This chicken dish is great over a simple salad. You can arrange the chicken over the greens; then, mix the Drizzle ingredients and use as the dressing.

This dish is also great served in soft tortillas with avocado, salad greens and shredded Mexican cheese.

For extra spice, you can add a chopped jalapeño chile to the marinade.

Love this recipe! My family finished every bite of the chicken and have been begging for me to make it again...which I will :) As an alternate idea, we filled flour tortillas with this chicken, a little shredded cheese, lettuce, tomato and a little lite sour cream. Yum!
