Tarragon Tomato Slices

Ingredients

  • 3 medium tomatoes, cut into 1/4-inch slices
  • 1/4 cup tarragon wine vinegar or cider vinegar
  • 1 tablespoon olive or vegetable oil
  • 1 tablespoon chopped fresh or1 teaspoon dried tarragon leaves
  • Freshly ground pepper
  • Lettuce leaves

    Place tomatoes in nonmetal dish. Shake vinegar, oil and tarragon in tightly covered container; pour over tomatoes. Sprinkle with pepper. Cover and refrigerate at least 2 hours to blend flavors. Serve on lettuce.
