Tarragon-Crusted Roast Beef

boneless beef top round roast (3 to 4 lb)

teaspoons salt

teaspoon freshly ground pepper

cloves garlic, finely chopped

tablespoons dried tarragon leaves

tablespoons olive oil
Fresh tarragon sprigs, if desired

  • 1 Heat oven to 450°F. Spray shallow roasting pan with cooking spray; place beef in pan. In small bowl, mix salt, pepper, garlic, dried tarragon and oil. Rub mixture on all sides of beef.
  • 2 Bake uncovered 15 minutes. Reduce oven temperature to 350°F. Bake 30 to 40 minutes longer or until of desired doneness. Cover; let stand 15 minutes before slicing. Garnish with tarragon sprigs.

Expert Tips

Starting the beef at a high temperature gives it a nice crust. Thinly slice beef for the best texture. Leftovers make great sandwiches.
