WOW! So rich, moist, delicious, creamy, and NOT overly-sweet! Simply a-m-a-z-i-n-g! Even my husband "WOWed" at it. And he's not a "lover" of sweets. The stout offsets the sweetness. I did not add the caramels on top because: In my haste, two out of the three layers fell apart because I did NOT wait to properly cool them, (it was almost midnight and I was dead tired), so instead, I turned it onto a Trifle Cake. It turned out even better because we did not have to slice it for the guests, they just scooped up cake onto a plate and reveled in the chocolatey deliciousness of it. I will make this again and again. Also, I used the box of triple chocolate fudge cake mix, because that's what I had.

I think the beer makes the cake a little less sweet & more complex, to offset the rich toppings. So one could probably substitute a hearty root beer or ginger beer? I made the cake w/o substitutions (tho left off the candy on top). Very easy. It makes a lot of frosting so I frosted the sides as well & decorated the bottom of the cake w/a row of choc mousse bunny shaped Peeps. I think next time I might add a layer of raspberry jam before the frosting, to brighten the intensity of the chocolate? Or make half the frosting & use a buttercream inside & the choc on the outside? If you are in the mood for super chccolaty, though, it would hit the spot.

I made this cake for my boss's birthday. Everyone on the office loved it, especially the men. It is very moist and not overly sweet, I ended up sending the recipe to 3 people by request.
