cups Rice Chex® cereal

cups Corn Chex® cereal

cups bite-size cheese crackers

cups bite-size pretzel twists

cup salted peanuts

tablespoons vegetable oil

tablespoons water
1
package (1 oz) Old El Paso® taco seasoning mix
  • 1 In large microwavable bowl, mix cereals, crackers, pretzels and peanuts.
  • 2 In small bowl, stir together oil, water and taco seasoning mix. Pour over cereal mixture, stirring until evenly coated.
  • 3 Microwave uncovered on High about 5 minutes, stirring every 2 minutes, until mixture begins to brown. Spread on waxed paper or foil to cool. Store in airtight container.

I made a Gluten Free version of this tonight. In place of the pretzels & cheese crackers, I used BBQ flavored corn chips, crunchy knock-off Cheetos and redskin peanuts. My husband and I both quite liked it. After a few handfuls, we discussed improvements for future batches. The flavor was a bit mild, we'll either be increasing the amount of taco seasoning or adding actual cumin and a touch of cayenne. I'd also like to try substituting lime juice for the water to bring an extra bit of flavor and "zing" to the tongue.

I like tacos a lot so I thought I''d like this recipe. I thought it was kind-of gross. Maybe the secret is in the taco seasoning.
