Taco Chili

Taco Chili is perfect for after-work days. It's quick, easy, and inexpensive. It makes approximately 12 servings at 1 cup each. Serve with cheese quesadillas.

lb lean ground beef

onion, chopped

15.5oz canned mild chili beans, undrained

14.5oz canned diced tomatoes, undrained

14.5oz canned corn, undrained
1
8oz canned tomato sauce
1
1.25oz packet of taco seasoning
cups of water
cups shredded mexican cheese (cheddar, monterey jack, etc)
  1. Brown lean ground beef in large saucepan with chopped onions. Drain.
  2. Add all remaining ingredients, except cheese. Stir. Bring to a boil Simmer on medium-low approximately 10 minutes. Stir occasionally.
  3. Serve topped with cheese. Also serve with sour cream and cheese quesadillas (optional).
