Taco Chicken with Corn Salsa

Ingredients

envelope (1 1/4 ounces) taco seasoning mix
4
boneless, skinless chicken breast halves (1 1/4 pounds)
2
tablespoons vegetable oil
1
can (11 ounces) whole kernel corn with red and green peppers, drained
1
medium avocado, pitted, peeled and chopped
2
tablespoons finely chopped red onion
2
tablespoons chopped fresh cilantro
1
tablespoon lime juice
1
teaspoon honey

  • 1 Reserve 2 teaspoons of the taco seasoning mix in medium bowl. Coat chicken with remaining taco seasoning mix.
  • 2 Heat oil in 12-inch skillet over medium heat. Cook chicken in oil 3 to 5 minutes, turning once, until brown. Reduce heat to medium-low. Cook about 8 minutes, turning once, until chicken is no longer pink when centers of thickest pieces are cut.
  • 3 While chicken is cooking, add remaining ingredients to reserved taco seasoning mix; toss gently. Serve salsa with chicken.

This is so easy to make and delicious! The leftover chicken makes great quesadillas as well; just dice it, add cheese, and heat in folded tortilla in a pan. I sometimes freeze leftover breast halves then thaw in fridge overnight to use in quesadilla the next day.

This dish is fantastic! The corn salsa is so good that I make it by itself to dip chips in or to put on tacos, fajitas, etc. I try to make the corn salsa the day before, all the flavors have a chance to settle together. I also leave out the avocado because my husband does not like it, but it is still so good.

I made this reciepe a couple of days ago and my family loved it my mom loved the salsa that goes with it I will make it again when I have company its an good and easy dish to make
