We really enjoyed this veggie casserole. I didn't have the crackers so I used two slices of bread, which I chopped up and mixed into the casserole. Then, I topped it off with Italian bread crumbs. I also used Mexican blend shredded cheese because we didn't have shredded Swiss on hand. My only comment is that it was a bit bland so I would likely add more salt the next time around. This was a good side dish for meatloaf!

Delicious recipe! I'm always looking for creative ways to get vegetables into my husband's tummy (guess I'll at least have practice once we have a kid), and this was a giant hit with him. I added a small package of tuna the last time I made this and it was a great dinner all by itself.

This recipe was great! It's a good portion for 2 people, with a little bit left over. I used french fried onion rings on top instead of the crackers and it was excellent. A great recipe when you want a "spruced up" veggie side dish. I will definitely keep this in my recipe box.

I made half the recipe, it was great for one with leftovers or two side dishes. I swapped the swiss for cheddar and the crackers for pasta to make it a pasta bake type dish. Altogether very yummy and quick, didn't put it in the oven.
