I made this tonight. I cut the recipe in half for just the 2 of us. I couldn't find the rice mix it called for so used Uncle Bens original wild rice. I didn't use extremely thick slices of ham and I wrapped the swiss cheese around the ham/chicken and secured with toothpick. It was just delicious. This one is a keeper.

I used chicken breast tenderloins, only 6 of them, instead of 4 whole breasts. I pounded them out a little first, as well. I couldn't find the rice called for in the recipe so I just used a chicken rice and vermicelli mix and omitted the red peppers. It was delicious! I read other reviews and decided to use less chicken and smaller portions (and obviously only 6 slices of ham). I also used one slice of cheese per piece of chicken because we LOVE cheese at my house. My husband asked me to make it again! I do believe this recipe needs some major tweaking but has major potential!

I seriously doubted this recipe when I saw that they asked for full breasts, so before I even tried it, I changed to good-sized chicken tenders and followed the recipe (and my instincts) and it came out okay... It will need some adjustment before I add it to my box, but I will be using it as a springboard!

Instead of the wild rice mix, I used instant white and brown rice with the water and added a can of cream of chicken soup for seasononing. I cut the chicken in half and followed the direction, except I cooked it for an hour, then checked it. It was perfect. It was a twist on an old favorite, my boys were over for dinner that night, as well as my daughters boyfriends, there was none left over. My hubby was disappointed, he wanted leftovers for lunch. I will NEVER make this again. Although it tasted ok, the big breasts were obviously TOO big. And I did have a couple smaller ones and STILL it was in the oven well over an hour & wasn't fully cooked. I wasted my time, effort & money on this one.
