Ingredients

cups Original Bisquick® mix

cup buttermilk
1
cup mashed cooked dark-orange sweet potatoes

large eggs
1/4
teaspoon ground cinnamon
1
tablespoon brown sugar
Maple syrup, if desired

  • 1 In medium bowl, stir Bisquick mix, buttermilk, sweet potatoes, eggs, cinnamon and sugar with wire whisk or fork until blended.
  • 2 Brush griddle or nonstick skillet with vegetable oil; heat griddle to 350°F, or heat skillet over medium-low heat.
  • 3 For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook until edges are dry. Turn; cook other sides until golden brown. Serve with syrup.

These were very good but the batter was far too thick to pour so I had to add a fair amount of water to get it to the right consistency. I did use a nonBisquik brand of baking mixture but I doubt that was the problem but who knows!! Also I found I could not make the big pancakes I prefer to do as it took too long for them to cook through. But the smaller ones called for in the recipe worked fine.

My family never eats sweet potatoes - they all think they don't like them. However, they absolutely loved this recipe! I made it exactly as written, except for a little more cinnamon and the healthier Bisquick mix, and they turned out perfectly fluffy. What a great way to sneak veggies into a meal! It took me 15 minutes, start-to-finish time using a big griddle. Next time I'll make a double batch and freeze some for leftovers.

Great! But we altered the recipe: 2c Bisquick 2c milk (light vanilla soy) 2 lg eggs 1 TBsp cinnamon 1/4 nutmeg 1 TBsp Sprinkle crushed nuts before flipping.
