My "Pastry Critics"(family and friends) thoroughly enjoyed this coffee cake. Easy to prepare, yummy and I have to double this for the "Critics" I let the pan cool a few minutes before I turn the pan upside down.

I'm in 4-H, and this recipe got me Reserve Champion (aka 2nd place!) at state fair, after I got Champion at county fair! It is sooo excellent, you just have to be careful to count how many you eat! Flipping the pan just right takes a little practice to keep any from running off the side, but it is definately worth it! I also used dark corn syrup instead of light, which gave it a much richer flavor. And sweet potatoes are really very nutritious, and take away the need for using as much sugar.

It was very good, but it seemed like something was missing. I added to the dough it self 1/2 teaspoon of each nutmeg and cinnamon. And 1/2 teaspoon cinnamon cinnamon to brown sugar that sprinkled on to the dough and it really brought out the sweet potatoe. My Sunday School class raved about it. Thank you Betty Crocker.
