Who says that sweet potatoes are just for side dishes and southern pies? Stir sweet potatoes into biscuits for a nice flavor change.

I've been making these for years for my family. I use sugar to taste and then add just a little bit more. Once they come out of the oven I brush butter on them. A must every Thanksgiving.

I just made these biscuits. The recipe looked simple, and I had high hopes they'd taste something like the ones my grandmother use to make. I confess I'm disappointed because they aren't sweet at all! I had noticed there was no sugar in the recipe, so I had added some non-sugar sweetener. I guess I should have added quite a bit more! If I get brave :), I'll try again!

I thought these were great as-is for a dinner side as a stand-in for plain biscuits. I just did drop biscuits instead of rolling, which worked fine. Will definitely make again! I baked my sweet potatoes the night before (had some for dinner, baked 2 extra), peeled and lightly mashed into a container and stored in the fridge until ready to use in the biscuits.

This is a very easy recipe.. I changed the recipe since I thought the biscuits needed some sweetness. I added about a tablespoon brown sugar & 1/4 teaspoon cinnamon. I used buttermilk instead of regular milk. I added herbs to the butter - a nice touch. They taste really great. Rich yet light, a little bit of spice (from the cinnamon), and refreshing. The next time I bake, I will add a little more brown sugar and an extra pinch of cinnamon. Or maybe add cheddar cheese to make it cheesy sweet potato buscuits.
