Relish this colorful and tasty salsa which is great with almost anything!

Ingredients

  • 1 medium papaya, peeled, seeded and chopped (1 1/2 cups)
  • 1 small cucumber, peeled and chopped (1 cup)
  • 1 small carrot, shredded (1/3 cup)
  • 1 small jalapeño chili, seeded and finely chopped
  • 1 tablespoon lime juice
  • 1 tablespoon white vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt

Steps

    Mix all ingredients in glass or plastic bowl. Cover and refrigerate at least 4 hours to blend flavors but no longer than 2 days. Stir salsa before serving.
