Ingredients

  • 3 ounces uncooked capellini (angel hair) pasta, broken in half
  • 4 cups shredded Chinese (napa) cabbage
  • 1 cup sliced mushrooms (3 ounces)
  • 1 cup Chinese pea pods, cut in half (4 ounces)
  • 1 can (8 ounces) sliced water chestnuts, drained
  • 3/4 cup sweet-and-sour sauce
  • 1/3 cup plain yogurt
  • 1/2 cup chopped salted cashews

Steps

    Cook and drain pasta as directed on package. Rinse with cold water; drain.

    Place pasta, cabbage, mushrooms, pea pods and water chestnuts in large bowl. Mix sweet-and-sour sauce and yogurt with fork. Pour over salad; toss until coated. Sprinkle with cashews.

    Cashews are the nut of the cashew apple. Their high fat content gives them their delicious buttery flavor. Because of that fat, cashews should be stored in the refrigerator or freezer so they don't become rancid.
