Sweet-and-Sour Meat Loaf

Ingredients

Meat Loaf

lb. lean ground beef
1/2
lb. lean ground pork
1/2
cup Progresso® Plain Bread Crumbs
1/4
cup purchased sweet-and-sour sauce
1
tablespoon instant minced onion
1/2
teaspoon garlic-pepper blend
1/4
teaspoon salt

Topping

4
tablespoons purchased sweet-and-sour sauce
3
or 4 green or red bell pepper rings
3
or 4 drained canned pineapple slices

Directions

  • 1 Heat oven to 350ºF. Beat egg in large bowl. Add all remaining meat loaf ingredients; mix well. Press mixture firmly in ungreased 8x4-inch loaf pan. Bake at 350ºF. for 40 minutes.
  • 2 Remove meat loaf from oven. Spread about 3 tablespoons sweet-and-sour sauce over loaf. Arrange bell pepper rings and pineapple slices over sauce. Brush with remaining tablespoon sauce.
  • 3 Return to oven; bake an additional 25 to 30 minutes or until meat loaf is thoroughly cooked in center and meat thermometer registers 160ºF. Cover with foil; let stand 5 minutes before cutting meat loaf into slices.

My mother always made normal meatloaf with ketchup when I was growing up. But this recipe is a GREAT alternative, is very easy and has a lot of flavor. I substituted a sweet Hawaiian BBQ sauce for the sweet-and-sour sauce, and it was very good. I will definitely make this again.

My husband hates meat loaf. When I told him that is what I was making for dinner last night he gave me the ugliest look and told him how much he hated meatloaf well being the person I am I made it anyway because I knew the ingredients are not the origina ingredients he was accustom too, well when it was time to eat it my husband had eaten half of the meatloaf HE LOVED IT!!!!! I doubt I will make this in the next 6 months because I dont want to meatloaf overload him but I will definitely be making it again. Try the recipe you will love it.

this is a very tasty recipe...it was soo moist and delicious...the only thing i would add is layer bread in the bottom of the pan so it will soak up all the grease...this will be a recipe i will be makin very often due to my husbands request for it
