Sweet and Sour Broccoli Chicken

A twist on Sweet and Sour Chicken, this recipe was just made up by my mom, and so I pass it on to you all :)

pound boneless skinless chicken breasts
package chicken gravy mix
20 oz. can diced pineapple
cups fresh (or frozen) broccoli
1 1/2
cups rice
sweet and sour sauce
canola oil
butter (optional)
  1. In a large skillet, heat on medium the canola oil. In a large saucepan, heat water to boiling, then add rice to cook while everything else cooks. Cut chicken into bite-sized pieces, then cook in skillet until light brown on each side.
  2. While the chicken is cooking, open the can of pineapple and drain juice into a cup-measure. The juice from the can should come up to one cup, if not, add water as needed. Pour gravy mix into juice and mix well. Once the chicken is lightly browned, add gravy mixture to the skillet. Heat to boiling, and let it thicken. Pour in sweet and sour sauce, broccoli, and pineapple. If the mixture looks too dry, add water as needed.
  3. Heat sweet and sour mixture until broccoli and pineapple are hot. When rice is finished, drain and add butter, if desired. Serve rice with sweet and sour mixture over top.
