Supreme Chicken Salad

Ingredients

  • 8 cups packed torn romaine lettuce
  • 2 cups chopped cooked chicken
  • 2 large mangoes, seed removed, peeled and cut up (2 cups)
  • 1 cup fresh raspberries (6 oz)
  • 1/2 cup crumbled goat cheese (2 oz)
  • 1/4 cup roasted salted sunflower nuts
  • 1/2 cup raspberry vinaigrette dressing

Steps

  • 1
    Place 2 cups lettuce on each of 4 serving plates. Evenly arrange chicken, mangoes, raspberries, cheese and sunflower nuts on lettuce. Drizzle with dressing. Serve immediately.

  • A mango slicer/pitter makes chopping up this delicious tropical fruit super easy and quick.
  • This salad is great for picnics! Simply toss together all of the ingredients except the dressing, and take the dressing along to drizzle just before eating.
