This was so easy to make and so delicious. I made it for my Dad who is an avowed soup lover and he absolutely loved it! It purees so easily in a blender which is great. The basil, red pepper olive oil and garlic topping make it unique.

So good! And easy. Made this for dinner tonight and it was a hit. We don't have a food processor, so I used my hand immersion blender and it worked great. The basil topping really made it. We served it with garlic bread sticks and it was gooooooood!
