Who would have guessed a pouch of sugar cookie mix got these bars off to a deliciously sweet start?

These are really sweet, but my mom and mother in law loved them. I would make them again only with another lemon.

I will not make these again! The crust (cookie mix) was way too hard. Could hardly cut the bars. Baking the cookie mix for 20 minutes and then 25 minutes more after adding the lemon mix is way too long. Crust was hard! Also needs more lemon flavoring.

These were aweful... Way too chewy and hard to remove from pan, hard to cut, and way too sweet.

Tho I'm a fabulous baker, I'm sorry to say but this is a bad combination. Never have sugar cookie mix as a base. Only shortbread. Despite the fact that I altered the recipe; I reduced the sugar to 1 cup and added 1/4 cup powdered sugar and increased lemon juice to 1/2 cup, I still can't taste the lemony mixture. I have to agree with one review that the cookie part is overpowering the lemon taste. I will not make this again.

I used the juice of 2 lemons and a little more lemon zest to make it as tart as I like them. I also added some lemon zest to the crust mixture. I followed the suggestion to line the pan with foil which worked wonderfully. Good basic recipe. I will definitely make them again soon.

The lemon bars are good...but I would have to agree with the majority here that they are not lemony enough. I reduced the sugar to 1-1/4 cups, but I dare say you could reduce to 1 cup and they would be sweet enough. I also increased the lemon juice to 1/3 cup and it definately still needed more, more like 1/2 cup lemon juice for a more distinct lemon flavor. I did not have any trouble with the crust as some were saying, but I did line my pan with parchment and sprayed it with cooking spray, the bars came out perfectly. These bars would be 5 spoons if only the lemon flavor was more detectable.
