Ingredients

3/4
cup grated Parmesan cheese
1/2
cup sun-dried tomatoes in oil, undrained
1/3
cup olive or vegetable oil
3
cloves garlic
1/4
cup pine nuts

  • 1 Place all ingredients in food processor. (Do not use blender.)
  • 2 Cover and process about 3 minutes, stopping occasionally to scrape sides, until smooth.

Expert Tips

Toasting brings out a nuttier flavor of pine or other nuts. A good doneness test, along with color, is when you can smell the toasted aroma.

To toast nuts, sprinkle in an ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until nuts begin to brown, then stirring constantly until nuts are light brown. Remove them immediately from the hot pan so they don't continue to toast and become too dark or scorch.

God morning, I would like to know more ways on using Sun-dried Tomatoes in oil! Like this recipe what would I use it on? Ilove it I've had it with pizza and pasta @ Restaurants! But I need more Ideas! Thank You! Gloria

This was very good. I used fresh sun dried tomato instead of oil packed and it was still very good. I tossed it with chicken and pasta and it was great with some garlic bread.
