Summer Cucumber Pasta Salad

Great for picnics, summer block parties, and using up all those garden-fresh cucumbers

large cucumbers
1/3
box orzo

Tbsp fresh dill

Tbsp fresh mint
zest of 1 lemon

salt & pepper to taste

small red onion

cup crumbled feta
  1. Thinly slice the red onion and soak in cold water for 5 minutes. Squeeze out the liquid from the onion and change the water.
  2. Repeat this soaking & wringing process 2 - 3 times depending on how strong you want the onion flavor. Chop onion.
  3. While onion is soaking, cook orzo according to package directions until al dante. Once done, rinse well under cold water to cool down. I
  4. n the bottom of a large bowl (perferably one with a lid to travel with) - combine the olive oil, lemon juice, salt, pepper, and half the chopped dill and mint. Mix.
  5. Peel, seed and dice the cucumber. Add to the bowl with the dressing. Add pasta to the bowl. Add onion and the rest of the dill and mint and lemon zest. Mix well. Add crumbled feta. Taste!
  6. Season with more dill, mint, salt, pepper and lemon juice as desired. Refrigerate until ready to serve.
