Ingredients

ounces uncooked spaghetti
1
tablespoon margarine, butter or spread
1/2
pound ground turkey
1
small green bell pepper, chopped (1/2 cup)
1
small onion, chopped (1/4 cup)
1
jar (14 ounces) spaghetti sauce
1
teaspoon chili powder
1/2
teaspoon salt
1/4
teaspoon pepper
2
eggs
1
cup small curd creamed cottage cheese
1/2
cup shredded mozzarella cheese (2 ounces)

Directions

  • 1 Heat oven to 375º. Grease pie plate, 10x1 1/2 inches. Cook and drain spaghetti as directed on package. Place spaghetti in pie plate, pressing down gently.
  • 2 Melt margarine in 10-inch skillet over medium-high heat. Cook turkey, bell pepper and onion in margarine, stirring occasionally, until turkey is no longer pink. Stir in spaghetti sauce, chili powder, salt and pepper; reduce heat to medium. Cook 5 to 6 minutes, stirring occasionally, until sauce is thickened.
  • 3 Mix eggs and cottage cheese; spread evenly over spaghetti. Spoon turkey mixture over cottage cheese mixture. Sprinkle with mozzarella cheese. Bake 35 to 45 minutes or until center is set. Let stand 5 minutes before cutting.

Made it the other night, I used hamburger instead of chicken. My family loved it, they called it "Poor Man's Lasagna". Good food and so easy!

This was a really good meal and the family loved the name. I did make a few changes: used beef instead of turkey, added garlic, and bake a 350 instead of 375. Will make this again - it gets a big family smiley face!
