I must share that I have been making Bisquick shortcakes for 50 years. Somehow they are better than scratch. I have been gluten free for about 16 months. I am still finding my way. These shortcakes are spectacular! The texture and taste is different than the original, but closer than other gluten free flour mixes deliver. I think that there will always be a packet of gluten free Bisquick in my pantry from now on. And all because of these shortcakes. My husband says that they are better! I did not drop them. I shaped them by hand as I always have shaped the traditional ones.

I found this drop style shortcakes to be too crumbly - with a little strawberry juice and whip cream, it completely fell apart to mush in matter of minutes, and if you did get a few bites before that happened there was too much "rice flour" grit in the cake for me to be really happy with this recipe. Maybe will try the short cake squares recipe next time. But as with most GF cooking, its better than not having it at all...

We just love this Gluten Free shortcake. My daughter has 2 children who are gluten intolerant & she introduced us to this. My husband & I live by ourselves and we are not Gluten Intolerant, but I still buy this Gluten Free Bisquick mix to make our shortcake, it's so good! However I do add 1/2 tsp almond extract & 1/2 tsp vanilla extract and bake it a few minutes longer.

Made these yesterday for dessert and they were very good. I baked them a full 12 minutes and they did not get "golden brown" but the color did not bother me. We sliced them in half (with gf it was necessary to take two long slices rather than the short back and forth cuts because it can fall apart). Next time I may sprinkle a litte sugar on top before baking. For GF it was good and everyone enjoyed the shortcake dessert.

quick and easy- I made a half recipe 1 lb strawberries 1/4 cup sugar 1 1/6 cup (approx)gluten free bisquick 3 tablespoons + 1/2 teaspoon butter 3/8 (half way between 1/4 and 1/2) cup milk 1 egg 1 1/2 tablespoons applesauce 1/4 teaspoon baking powder made 6 good size shortcakes (single layer) 12 min at 425 degrees. Loved it! :-)

These are very tasty. Even my non-GF husband loves them... he's normally quick to point out that my desserts are "pretty good for GF." I would consider making them smaller next time.
