Strawberry Shortcake Chex Treats

These bite-size beauties are easy to make using Rice Chex cereal, marshmallows and angel food cake. Add the freshest strawberries you can find, and you'll have a sensational summer dessert.

cups cut-up fresh strawberries
tablespoons sugar
tablespoons butter
bag (10 oz) large marshmallows or 4 cups miniature marshmallows
cups Rice Chex™ cereal

cups cubed (1 inch) angel food cake
cups frozen (thawed) whipped topping

  • 1 Spray 13x9-inch (3-quart) glass baking dish or pan with cooking spray.
  • 2 Toss strawberries with sugar; set aside.
  • 3 In large microwavable bowl, microwave butter uncovered on High about 45 seconds or until melted. Add marshmallows; toss to coat. Microwave 1 minute to 1 minute 30 seconds longer. Stir until marshmallows are completely melted and mixture is well blended.
  • 4 Add cereal; mix well. Add angel food cubes; mix well.
  • 5 Using waxed paper or spatula sprayed with cooking spray, press mixture evenly into baking dish. Cool 15 minutes.
  • 6 For bars, cut into 6 rows by 3 rows. Top each with 1 tablespoon whipped topping and some strawberries. Serve immediately.

Expert Tips

This is a great recipe for using up those last couple pieces of angel food cake.

If mixture is difficult to press into pan, slightly dampen fingers with water.
