Strawberry-Rhubarb Frozen-Yogurt Parfaits

Ingredients

  • 4 cups cut-up rhubarb
  • 1/3 cup water
  • 1/2 package (4-serving size) strawberry-flavored gelatin (1/4 cup)
  • 1 cup chopped fresh or frozen (thawed) strawberries
  • 1/2 gallon vanilla frozen yogurt

Steps

    Heat rhubarb and water to boiling in 2-quart saucepan. Boil 5 minutes, stirring occasionally; remove from heat. Stir in gelatin until dissolved. Boil 5 minutes longer, stirring constantly; remove from heat.

    Stir in strawberries. Serve sauce warm or cold, layering frozen yogurt and sauce in parfait glasses.

  • If you have the time, layer the sauce and frozen yogurt in pretty parfait or wine glasses. It's perfect to serve when you're entertaining friends. In a rush? Just scoop the frozen yogurt into bowls and spoon the sauce over.
