Strawberry Pancake Skewers

Blogger Bree Hester of Baked Bree dishes up a delicious brunch idea using Bisquick. Silver dollar pancakes skewered with fresh strawberries and dipped in whipped cream are a perfect breakfast inspired treat for weekend brunch.

Ingredients

cups Original Bisquick™ mix

cup milk

eggs
1
quart strawberries

cup frozen (thawed) whipped topping

wooden skewers
  • 1 Brush griddle or skillet with vegetable oil, or spray with cooking spray. Heat over medium-low heat.
  • 2 In medium bowl, stir Bisquick mix, milk and eggs with whisk until blended.
  • 3 Pour onto griddle by tablespoonfuls to make silver dollar-size pancakes. Cook until edges are dry. Turn; cook until golden.
  • 4 Thread pancakes and strawberries onto skewers. Serve with whipped topping for dipping.

Expert Tips

Use peaches, pineapple, or whatever fruit you desire to make your kabobs.

For a heartier version, alternate pancakes with pieces of cooked sausage links.

You could also serve jams and jellies for dipping for variety.
