Ingredients

packages (10 ounces each) frozen strawberries, thawed
1
package (1 3/4 ounces) powdered fruit pectin
1
tablespoon grated orange peel
3 1/2
cups sugar
1/2
cup orange juice

Directions

  • 1 Mix strawberries, pectin, orange peel and orange juice in 3-quart saucepan until pectin is dissolved. Heat over high heat about 2 minutes, stirring constantly, to rolling broil. Stir in sugar. Heat to rolling boil, stirring constantly; remove from heat.
  • 2 Skim off foam. Immediately pour into hot, sterilized jar, leaving 1/4-inch headspace, or into freezer containers, leaving 1/2-inch headspace. Wipe rims of jars or containers; seal. Let stand at room temperature about 24 hours or until set. Store in refrigerator or freezer up to 3 months.

This spread is simple to prepare and was a welcome addition to gift baskets I made for Christmas this year. I have already received requests to make more! I myself am not much of a jam/jelly eater; however this spread has changed my mind! my husband loves it on a bagel with cream cheese, especially taking it to work and 'showing off" my cullinary talent! If only they knew how easy it is to make!
