Strawberry Margarita Shortcakes

With a splash of tequila and a sprinkling of freshly grated lime, these shortcakes add a sophisticated twist to a traditional dessert.

Ingredients

  • 1 lb fresh strawberries, sliced
  • 1/4 cup tequila
  • 1 tablespoon sugar
  • 6 individual sponge shortcake cups
  • 1 container (8 oz) frozen whipped topping, thawed
  • Grated peel of 1 lime

Steps

  • 1
    In medium bowl, stir together strawberries, tequila and sugar. Let stand 30 minutes.

    To serve, spoon strawberries evenly into shortcake cups. Dollop with whipped topping; sprinkle with lime peel. Drizzle with strawberry liquid left in bowl.

  • tip 1
    Taste your strawberries before slicing; if they’re not incredibly sweet, add more than 1 tablespoon sugar.
  • tip 2
    The longer you allow the strawberries to stand with the sugar and tequila, the more flavorful they will be. You can mix them the night before and refrigerate until serving.
  • tip 3
    Rum can be substituted for the tequila. Or, to make this a kid-friendly dessert, leave out the tequila altogether.
