Strawberry Margarita Shortcakes

With a splash of tequila and a sprinkling of freshly grated lime, these shortcakes add a sophisticated twist to a traditional dessert.

lb fresh strawberries, sliced
cup tequila
tablespoon sugar
individual sponge shortcake cups
container (8 oz) frozen whipped topping, thawed
Grated peel of 1 lime

  • 1 In medium bowl, stir together strawberries, tequila and sugar. Let stand 30 minutes.
  • 2 To serve, spoon strawberries evenly into shortcake cups. Dollop with whipped topping; sprinkle with lime peel. Drizzle with strawberry liquid left in bowl.

Expert Tips

Taste your strawberries before slicing; if they’re not incredibly sweet, add more than 1 tablespoon sugar.

The longer you allow the strawberries to stand with the sugar and tequila, the more flavorful they will be. You can mix them the night before and refrigerate until serving.

Rum can be substituted for the tequila. Or, to make this a kid-friendly dessert, leave out the tequila altogether.
