Nonalcoholic strawberry margarita mix makes this party cake a great addition to picnics and potlucks.

I made this for my mom & family for mothers day. It was a big hit especially the topping with the lime zest in it. I added a touch by adding edible flowers on it as well as sliced strawberries for a beautiful touch.

I made this cake for a small cookout with my family. Everyone loved it. Even if people were full from the other food, they still made room for some cake. Also, it smelled wonderful while it was baking.

This was the first time I made the cake so I made the actual cake exactly how it says to make it. I let it cool for about 20 minutes then I took the bottom of a wooden spoon and poked holes all over the cake about an inch apart. The cake wasn't strawberry enough to me so I poured some extra margarita mix all over the unfrosted cake, covered it, and put it in the fridge for about 2 hours to let it soak in. The longer you leave it, the better it will be. When the cake cooled down, I made the frosting the same way, but I also added a container of Yoplait Key Lime flavored yogurt to the whipped topping along with the zest. The lime flavor was still pretty subtle so I definitely think this is a much needed step as the whipped topping with the zest is not "limey" enough. The cake was awesome and moist and the flavors worked very well together. Everyone loved it, to include myself :) I think next time I will actually puree some strawberries and sugar and pour it on instead of the margarita mix, but the mix was still pretty darn good. The three spoons were for the original recipe. After changes, it would be a 5.

This is a super easy cake to make. I used one Betty Crocker white cake mix, 3 egg whites, 1/2 cup water, 1/3 cup oil, 3/4 cup margarita mix and stirred until blended. I baked it in a preheated 350 degree oven for 30 minutes then cooled on a baking rack for about an hour. I then topped it with thawed whipped topping. I think my husband and I will fight over eating this one! Made it right before Valentine's Day and took some to my daughter at college. Of course she devoured it; she's a college student!

This was amazing! I made it for a big party alongside 5 other desserts and this got the most raving! You have to like lime to like the frosting.

RE Queenofsoul: Most major supermarkets carry this. Jose Cuervo and Baja Bob's are just two of the brands that make this, but any brand will do. I suggest calling your supermarket manager to see what they keep in stock. There are also "scratch" versions of this if you google it. Hope this helps. Sincerely, Cate

I made this cake yesterday and it is a huge hit with my family. I did double the amount of lime zest and I am glad I did. Even with it doubled, I feel it needed more and I will triple it next time. Terrific cake!
