Strawberry-Kiwi-Spinach Toss

cups bite-size pieces fresh spinach

pint strawberries, cut in half (2 cups)

kiwifruit, cut into bite-size pieces (2 cups)

cup broken pecans

2/3

cup julienne strips Gouda or Edam cheese (4 oz)

1/4

cup lime juice

1/4

cup honey

tablespoons vegetable oil

teaspoon grated gingerroot or 1/2 teaspoon ground ginger

• 1 In large bowl, mix spinach, strawberries, kiwifruit, pecans and cheese.
• 2 In tightly covered container, shake all remaining ingredients until smooth. Pour over salad; toss to mix.
