Tried this in cupcake form. It was really good! The recipe wasn't overly sweet which everyone liked. For cupcake versions, back off the cooking time by 10-15 minutes or it could end up a little on the dry side. I also only had cinnamon graham crackers and it didn't affect the taste so you can safely use that if that's all you have. You could try any topping. I had Smuckers organic strawberry preserves which was nice.

This recipe was phenomenal :-) This cheesecake is rich, moist, sweet, delicious, and rivals restaurant-grade cheesecake. When I've made it, I've left out the hot fudge (or replaced it with a white-chocolate version) and substituted the strawberry preserves with blueberry ones (but you can use any preserves!). I've also covered the preserves with a mixture of fresh blueberries, raspberries, and strawberries and sprinkled grated white chocolate (or drizzled melted white chocolate) on top...it's awesome!

I almost did not try this recipe because of the lack of reviews, but I am sure glad I did. I have used many cheesecake recipes and they all turn out good in their own way. But if you are trying to find one that is EASY and tastes FABULOUS, give this one a try. The crust was great and the filling was really fast to make. Just make sure you have plenty of time because it does have to be refrigerated for over 8 hours. Next time I will try a different topping though. I wasn't that impressed with the melted preserves, but it was still delicious. The party I made it for loved it!
