they make a pectin especially for freezer jam. it uses way less sugar, almost half. you can also use splenda or other sweetner. I have also mixed sugar free/fat free jello in with the fruit. it offers a beautiful color and enough sweetness. you can either use the same flavor as the fruit or mix flavors like orange jello with strawberries or lemon with blueberries.

This is the best recipe for Strawberry Freezer Jam, and it is foolproof if u use FRESH strawberries. They CANNOT be refrigerate first. Come strawberry season this year, I plan to make me a couple batches. My son has about wiped out my supply in the freeaer.
