Stir and Scoop Mini-Rolls

Ingredients

Rolls

  • 2 cups Gold Medal™ all-purpose flour
  • 1 tablespoon sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup butter or margarine, softened
  • 2/3 cup milk

Savory Italian Cheese Topping

  • 2 tablespoons Caesar or Italian dressing
  • 1/4 teaspoon Italian seasoning
  • 2 teaspoons grated Parmesan cheese

    Heat oven to 400°F. Grease cookie sheet. In medium bowl, mix flour, sugar, baking powder and salt. Cut in butter, using fork, until mixture is crumbly. Stir in 2/3 cup milk until dough forms a ball and leaves side of bowl. Stir in additional milk, if necessary, 1 tablespoon at a time, until dough is soft and slightly sticky. Beat 25 strokes.

    On cookie sheet, drop dough by rounded tablespoonfuls about 1 inch apart. In small bowl, mix dressing and seasoning. Brush over tops of rolls. Sprinkle with cheese.

    Bake about 12 minutes or until golden brown. Serve warm.

  • Omit the topping and sprinkle the unbaked rolls with miniature chocolate chips, chopped fresh dill weed, shredded cheese, granola cereal, rosemary, caraway seed or sesame seed.
  • Get the scoop on quick cleanup! Line a cookie sheet with parchment paper before dropping the dough. Simply toss the paper after baking the rolls.
  • For Crunchy Almond Butter Topping , in small bowl, mix 1 1/2 tablespoons chopped sliced almonds, 1 tablespoon softened butter and 1 tablespoon light corn syrup. Spread over tops of unbaked rolls; sprinkle with 2 teaspoons sugar. Bake as directed.
