Medium-Large Well Ripened Tomatoes

Medium Bell Pepper

Medium Red Onions

Teaspoon Cilantro

Teaspoon Garlic (finely chopped)

Medium Jalapeno (seeded and chopped)

1/4

Cup Rice Vinegar

Teaspoons Olive Oil

1/4

Teaspoon Salt (to taste)

Teaspoon Lemon Juice

• 1 Boil a pan of water, dip each tomato in the boiling water for 15 to 30 seconds or until the skins are easily removed. Discard the skins. Chop tomatoes into small chunks and set aside.
• 2 Mix; onion, bell pepper, garlic, and olive oil in a microwave safe bowl. Microwave on high, uncovered, for 1 to 2 minutes. Stir half way through.
• 3 Remove from microwave and add; cilantro, jalapeno, rice vinegar, salt and lemon juice. Microwave on high, an additional 1 to 2 minutes. Stir half way through. Mix well after microwave is done.
• 4 For best results cover and refrigerate overnight. Serve with salted tostado chips.
