I've been making this into a "berry shortcake" for many years and it's always a hit! Usine a long knife, I slice the cake into two layers. I beat heavy cream with 10x sugar to taste and vanilla. I ice the first layer and generously place sliced strawberries on top before I place the top layer and ice with the entire cake with whipped cream and create the flag as shown. This year, it's a half sheet cake! Wow!

Company was quite impressed with this dessert. I did keep it in the 13x9 glass pan; however, for convenience. For frosting, I used 8oz sugar free Cool Whip and 8oz non-fat cream cheese whipped together with a few tbls Splenda. The actual flag has 7 red stripes and had to cut the strawberries smaller to get it to the actual size and used the tiny marshmallows for the white stripes. Also used 50 blueberries. Also, after 30 min after taking the cake out of the oven, punctured the cake with handle of small wooden spoon about 1 inch intervals and spooned jello over the cake filling the holes. In making the jello, you use only 1 3/4 c. liquid and let stand to room temp prior to putting over cake. It was beautiful when cut....the red jello made stripes into the white cake and added taste. You could use sugar-free jello if you are cutting calories.

Sorry folks.....in the review I just made for this cake I omitted that after spooning the jello over the cake it must be kept in the fridge. Also with the Cool Whip frosting, it must be kept refrigerated.

This cake was a big hit at my party! I embellished it by cutting it half, whipping up a quick custard of one small box of vanilla pudding with 1/3 cup of milk and 1 half of a bar of cream cheese. I spread that on top of the bottom layer and then add sliced strawberries in about a cup and a half of strawberry gel (you can buy it at the store). Then I iced it with whipped cream, put it in the freezer for about an hour and topped with the berries just before the party!!

This cake is very yummy!!! I didn't follow everything as it said. I made mine a "diet" version. I did not use oil or eggs. I only used the dry cake mix, 1 12oz can of diet soda and cream cheese frosting. The cake always comes out moist and fluffy. No one can ever tell it's diet :) Love the fruit on top!

I loved this recipe. I tried it with the frosing however, I prefer using whipped topping. It has less sugar nd blends better with the berries.
