Ingredients

box (1 lb 2.4 oz) Betty Crocker® Original Supreme Premium brownie mix
Water, vegetable oil and egg called for on brownie mix box
1/4
cup butter or margarine
3
cups miniature marshmallows
1/4
cup packed brown sugar
4
cups popped popcorn
2/3
cup salted peanuts

  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Line 8-inch or 9-inch square pan with foil so foil extends about 2 inches over sides of pan. Spray foil with cooking spray.
  • 2 Make and bake brownie mix as directed on box. Cool completely, about 1 1/2 hours.
  • 3 In large microwavable bowl, microwave butter and marshmallows uncovered on High 1 minute or until melted; stir until smooth. Stir in brown sugar; microwave uncovered on High 30 seconds longer. Stir in popcorn and peanuts until coated. Spoon evenly over brownies; press lightly to even surface. Cool completely, about 1 hour. For brownies, cut into 4 rows by 4 rows.

These are creative, easy to make, and very popular at the MLB playoff party I made them for. The balance of salty and sweet was perfect, and we really enjoyed the chewy/crunchy combo. Two tips: 1) I wouldn't use foil again; it only complicated the process, and 2) definitely let the brownies cool completely before adding the popcorn and peanut mixture -- if the brownies are still warm the marshmallow glaze will become runny. I will absolutely make these again!

These were pretty gross. I made then for a ball game because I thought the kids would like them. The whole batch ended up in the garbage can. The chewy-ness of the brownie does not go with the crunchy-ness of the popcorn, you think it would, but no. Don't even try these! If I could give NO spoons I would.
