I too have made this for years. I use the Cool Whip and cream cheese mixture and top with a variety of fruit in season. I've even resorted to using canned pineapple in a pinch. My recipe calls for a glaze of apricot preserves-2-3 tablespoons thinned with a little water and brushed over the fruit. Works to keep bananas from turning dark.

I made this for the first time and it is delish. I substituted marshmallow fluff and cream cheese for the icing. The icing seemed like it would be too sweet with the sugar cookie crust. Was a big hit.

I love making fruit pizza during the summer....its one thing I know there will never be leftovers. :) I Instead of frosting I do 8oz of frozen whipped topping (thawed) and 8oz cream cheese beat together. Not as sweet as the frosting but delicious!

So impressed with the recipe. I made it for a birthday and all the kids ate it all up picking at every last crumb. Definetly going to make again. Very easy. Unlike you like very rich and the taste of raw frosting, add in a whole lot more whip cream to dilute the stong taste of the frosting..
